Ingredients:

1 white onion diced

2 large carrots shredded

2 ribs celery, cut into 1-inch dice

1 bell pepper diced

2 cloves garlic

1 pound ground beef

1 pound mild Italian sausage

10 ounces tomato paste

1 1/2 cups good red wine

Water

2 bay leaves

1 tablespoon of thyme

1 pound spaghetti

1/2 cup grated parmesan cheese

Extra-virgin olive oil

Kosher salt

Recipe:

In a large pan over medium heat, coat pan with oil. Add the veggies and season with salt. Bring the pan to a medium-high heat and cook until nice and brown, stirring frequently, about 15 minutes.

Add the ground beef and Italian sausage, season again with salt. Cook until brown and then cook for another 15 minutes.

Add the tomato paste and cook 4 to 5 minutes. Add red wine and cook until the wine has reduced by half, another 4 to 5 minutes.

Add water to the pan until the water is about 1 inch above the meat. Add bay leaves and thyme and stir. Bring to a boil and reduce to a simmer, stirring occasionally. As the water evaporates add more, about 1 cup at a time. Don't be afraid about adding water during the cooking process, you can always cook it out. The trick is to reduce and add more water, repeat. Stir and taste often. Season with salt and simmer for 3 1/2 to 4 hours.
