Roast Chicken


This Dutch oven roasted chicken recipe is a tasty way to prepare your chicken for a great family meal. With a Dutch oven you can't go wrong.


Ingredients:

kosher salt, pepper, avocado oil

carrots, white onion, fennel, garlic


How to cook:

Preheat oven to 400° F - 200° C

Pat dry the chicken inside and out.

Salt and pepper the chicken.

Poke small tooth pick size holes in the skin. 20 holes should do it.

Place cut veggies on the bottom of the Dutch oven and place the chicken on the top of the veggies.

In the oven it all goes with the lid on for 30 minutes.

For the last 30 minutes remove the lid.

Let your chicken rest for at least 10 minutes.
