Keto Chicken Casserole

For Two



Ingredients:


2 tbsp avocado oil

¼ cup diced red onion

2 chopped portobello mushrooms

5 oz baby spinach

2 oz cream cheese

1/24cup grated Parmesan cheese


2 tbsp mayonnaise

1/4 cup heavy cream

2 cloves minced garlic

1 tsp Dijon mustard

5 strips of bacon, cooked and chopped

10oz
cooked chicken (I used a rotisserie chicken)


1/2 tsp salt

1/2 tsp
black pepper

1/2 cup shredded mozzarella



Instructions:


Preheat the oven to 375°F and grease a casserole dish if using one with avocado oil.

Preheat a large skillet to medium high heat and add 1 tbsp avocado oil.

Add the onions and mushrooms and saute for 3-5 minutes. Add spinach and cook for 1-2 minutes.

Turn the heat down to medium and add in the cream, cream cheese, mayo, mustard, garlic, Parmesan cheese and combine using a spoon until mixed.

Add the cooked and chopped bacon, salt & pepper and the chicken. Mix to combine.

You can now transfer the contents to a casserole dish if you are not using an over safe skillet.

Spread mozzarella cheese on top and bake for 5 minutes and then broil for 2-3 minutes.
