Cowboy Caviar


Servings: 10 people


Ingredients

• 6 Plum tomatoes diced

• 1 bell bell pepper diced

• 1 medium onion finely diced

• 2 jalapeño peppers seeded and diced

• 1 large avocado peeled, pitted and diced (love my avocado, I used 2)

• 15 oz can corn drained (or frozen)

• 15 oz can black beans well rinsed and drained

• 1/2 to 1 bunch of cilantro chopped (I like cilantro so I used 1 bunch)

• 3 Tbsp lime juice

• 1/2 cup light Italian Dressing

• 3 medium garlic diced

• Sea salt to taste


Instructions

1. In a large mixing bowl, combine diced tomatoes, chopped onion and bell pepper, seeded and diced jalapeño (don’t get any on your hands and touch your eyes), avocado, corn, black beans and cilantro.

2. Stir in 3 Tbsp of lime juice, 1/2 cup of Italian dressing, 4 pressed garlic cloves and salt to taste. Mix everything together and serve with tortilla chips.


If you're looking for a great summer pasta salad, cook the pasta and let cool. Add the cowboy caviar and your favorite dressing....sooooo good!
